The perfect gulab jamun is a contradiction: firm enough to hold its shape, soft enough to melt. The dough — milk powder and a little flour bound with ghee — must be kneaded smooth with zero cracks, because any crack splits open in the oil. Fry them low and slow until they turn the color of honey, then slip them into warm (never hot) syrup so they drink it up without collapsing.

Ingredients

  • For the jamuns: 1 cup (130 g) full-cream milk powder, 1/4 cup (30 g) all-purpose flour, 1/4 tsp baking soda, 2 tbsp ghee, 1/4 cup (60 ml) warm milk, as needed
  • For the syrup: 1 1/2 cups (300 g) sugar, 1 1/2 cups (350 ml) water, 4 green cardamom pods (crushed), 1 tsp rose water, a few strands of saffron
  • Oil or ghee, for deep frying
  • Chopped pistachios, to garnish

Method

  1. Make the syrup first: simmer the sugar, water, cardamom and saffron for 8 minutes until slightly sticky (one-string consistency is too thick — it should just coat a spoon). Stir in the rose water and keep warm, not hot.
  2. Mix the milk powder, flour and baking soda. Rub in the ghee, then add warm milk a spoonful at a time and knead into a soft, smooth dough. Rest 10 minutes.
  3. Roll into smooth, crack-free balls about the size of a walnut. If a ball cracks, re-knead that piece.
  4. Heat oil to 140 C (280 F) — low. Fry the balls in batches, stirring gently, for 8 to 10 minutes until evenly deep golden. They will swell to nearly double.
  5. Lift out, drain 30 seconds, and drop directly into the warm syrup. Soak at least 2 hours.
  6. Serve warm or at room temperature, garnished with pistachios.

Tips for success

  • Crack-free rolling is the whole skill — take your time on each ball.
  • Low oil temperature is essential; hot oil browns the outside while the center stays raw.
  • Syrup must be warm, not boiling — hot syrup breaks the jamuns apart.
