A proper biryani is built in layers, not stirred in a pot. The chicken marinates in yogurt and spices while the rice is parboiled to exactly 70 percent — firm enough to survive the steam, soft enough to finish on dum. Sealed over low heat, the saffron, fried onions and whole spices perfume every grain. This is the weekend-centerpiece version: worth the time, and the leftovers are even better.

Ingredients

  • 1 kg (2.2 lb) chicken, bone-in pieces
  • 1 cup (240 g) plain yogurt
  • 2 tbsp ginger-garlic paste
  • 2 tbsp biryani masala
  • 1 tbsp red chili powder
  • 1 tsp turmeric powder
  • 1 tsp salt, plus more for the rice
  • 3 cups (600 g) basmati rice, soaked 30 minutes
  • 4 tbsp ghee or oil, divided
  • 2 large onions, thinly sliced
  • 4 green cardamom pods, 4 cloves, 2 bay leaves, 1 cinnamon stick
  • 1/2 cup warm milk mixed with a pinch of saffron
  • 1/2 cup fresh mint leaves
  • 1/2 cup fresh coriander leaves, chopped
  • 3 green chilies, slit
  • 1/4 cup fried onions, for topping

Method

  1. Marinate the chicken with yogurt, ginger-garlic paste, biryani masala, chili powder, turmeric and salt. Cover and rest at least 1 hour (overnight in the fridge is ideal).
  2. Heat 2 tbsp ghee in a heavy pot and fry the sliced onions until deep golden, 8 to 10 minutes. Remove half for layering; keep the rest in the pot.
  3. Add the marinated chicken to the pot with the onions. Cook on medium-high for 12 to 15 minutes, until the chicken is half-cooked and the oil separates at the edges.
  4. Meanwhile, boil a large pot of salted water with the cardamom, cloves, bay leaves and cinnamon. Add the soaked, drained rice and boil exactly 5 to 6 minutes — the grains should be 70 percent cooked, still firm in the center. Drain immediately.
  5. Layer half the rice over the chicken, then scatter the reserved fried onions, mint, coriander and green chilies. Add the remaining rice and drizzle the saffron milk and remaining ghee over the top.
  6. Cover the pot with a tight lid (seal the rim with a clean cloth or foil if needed). Cook on high for 3 minutes, then on the lowest heat for 25 minutes — this is the dum.
  7. Rest 10 minutes off the heat without lifting the lid, then open and gently mix from the sides so the layers show. Serve with raita.

Tips for success

  • 70-percent rice is the whole game: bite a grain — it should break into 2 to 3 pieces, not mash.
  • A heavy, tight-lidded pot matters more than any spice. If steam escapes, the dum fails.
  • Bone-in chicken stays juicy through the long steam; boneless breast dries out here.
